Almond & Oat Chai Cake with Figs

Chai ... it’s not just for tea. There are countless ways to integrate healthy and tasty chai into your everyday life. Here’s one such way for you:

Almond and Oat Prana Chai Cake with Figs

With a full texture, similar to pound cake, this cake uses uses almond flour instead of normal flour. It’s a heart-warming almond chai spiced cake, topped with yoghurt and fresh figs. yummy! 

Ingredients


For the cake:

  • 2 cups almond meal
  • 1 cup oat flour
  • 2 eggs 
  • 80ml butter or coconut oil, melted
  • 100ml maple syrup 
  • 40g chai + 120ml water (brew for three mins in a little pot, strain and let cool) 
  • 50ml plant-based milk
  • 1 tsp baking soda
  • 1 tbsp lemon juice
  • ½ tsp vanilla extract 
  • 1 tsp cinnamon powder 
  • 1 tsp nutmeg  powder
  • A pinch of salt 

For the frosting: 

  • coconut yogurt (or you can use Greek yogurt) 

Topping:

  • Five fresh figs

Instructions

Preheat the oven to 180°C and line an eight-inch cake tin with parchment paper.

In two separate bowls, combine all dry, and all wet ingredients. Mix the wet very well and then add it to the dry ingredients. Mix well. 

Add the batter into prepared tin and bake for 40 minutes or until a pick comes out clean.

Let cool for a bit then take it out of the tin and let it cool completely on a rack.

When the cake is completely cool, to frost, layer coconut yogurt on top of the cake and placed sliced fresh figs on top.  

Finish the cake with a dusting of cinnamon or nutmeg powder.
