Chai Granola Parfait with Yoghurt & Strawberries
Homemade granola can be a healthy, comforting, and delicious treat. Most of the store-bought stuff is high in sugar, contains unhealthy fats, and is packed full of fillers. Whipping up your own at home is super easy and quick, while also changing things up and adding Chai in the flavour.
INGREDIENTS
- ½ cup pumpkin seeds
- ½ cup sunflower seeds
- ½ cup almonds
- ½ cup cashews
- ¼ cup coconut flakes
- ¼ butter
- 1 tbsp oil
- 4 tbsp Prana Chai
- 1¼ cup water
- 1 cup honey
- 1¼ cup yoghurt
- 1 punnet strawberries (250g / 0.55 Ibs)
METHOD
- Crush all nuts into small pieces by hand or in a blender. Don’t overdo it!
- Place Prana Chai and water into chai pot, bring to simmer then turn off the heat and let cool.
- Mix all ingredients in a mixing bowl.
- Spread ingredients onto a baking tray and roast at 160°C/ 320°F until brown and crunchy.
- Place two tablespoons of yoghurt into the bottom of a glass, add granola, layer strawberries and repeat until glass is full.
