Sticky Chai Date Pudding

Add a touch of #onlythegoodstuff  to the classic sticky date pudding!

INGREDIENTS
  • 2 cups dates - stoned & chopped
  • 1 tsp bicarb soda
  • 1 ⅓ cups Prana Chai simple syrup
  • ¼ cups vegan butter
  • ¾ cup brown coconut sugar
  • 1 ⅓ cups self-raising flour
  • ½ tsp vanilla essence
Caramel Sauce
  • 2 cups brown coconut sugar
  • 2 cups Prana Chai simple syrup
  • 1 cup coconut cream
  • 1 cup vegan butter
  • 1 vanilla bean, split and seeds scraped
HOW TO MAKE:
THE CAKES:
  1. Preheat oven to 180C & butter 12 cup muffin pan
  2. Create Prana Chai simple syrup following the recipe
  3. In a bowl, combine dates, bi-carb soda & Prana Chai simple syrup, set aside to soak
  4. Cream butter and sugar & sieve flour over the top
  5. Stir in date mixture & vanilla essence then gently fold the mixture 
  6. Pour into prepared cake tin & bake for 40 minutes
THE SAUCE:
  1. Combine all Caramel Sauce ingredients in a small pot and bring to the boil
  2. Reduce heat & simmer for 5 minutes
  3. Remove vanilla bean
  4. Pour ⅓ of the sauce over pudding, soak for 3 minutes
  5. Slice the cake, pour again & serve!
