Sticky Chai Date Pudding
Add a touch of #onlythegoodstuff to the classic sticky date pudding!
INGREDIENTS
- 2 cups dates - stoned & chopped
- 1 tsp bicarb soda
- 1 ⅓ cups Prana Chai simple syrup
- ¼ cups vegan butter
- ¾ cup brown coconut sugar
- 1 ⅓ cups self-raising flour
- ½ tsp vanilla essence
Caramel Sauce
- 2 cups brown coconut sugar
- 2 cups Prana Chai simple syrup
- 1 cup coconut cream
- 1 cup vegan butter
- 1 vanilla bean, split and seeds scraped
HOW TO MAKE:
THE CAKES:
- Preheat oven to 180C & butter 12 cup muffin pan
- Create Prana Chai simple syrup following the recipe
- In a bowl, combine dates, bi-carb soda & Prana Chai simple syrup, set aside to soak
- Cream butter and sugar & sieve flour over the top
- Stir in date mixture & vanilla essence then gently fold the mixture
- Pour into prepared cake tin & bake for 40 minutes
THE SAUCE:
- Combine all Caramel Sauce ingredients in a small pot and bring to the boil
- Reduce heat & simmer for 5 minutes
- Remove vanilla bean
- Pour ⅓ of the sauce over pudding, soak for 3 minutes
- Slice the cake, pour again & serve!
