Angela Fleay's Chai Vanilla Honey and Caramilk Choc Hot Cross-buns #PranaMyWay

Angela Fleay shares spiced chai, vanilla bean, honey and caramilk choc hot cross buns brushed with a chai and cinnamon sugar milk!


  • 600 g bread flour
  • 100 g castor sugar
  • 15g dried yeast
  • 2 tsp bread improver
  • 2 tsp mixed spice
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp fine table salt
  • 60 g softened butter
  • 2 eggs
  • 1 1/4 cups chopped caramilk chocolate
  • 320 ml of milk
  • 2 tbs honey
  • 2 tsp vanilla bean paste
  • 3 tbs Prana original chai

Cross paste

  • 1/2 cup bakers flour
  • 1/2 cup milk


  • Reserved milk mix
  • 1/4 cup sugar
  • 1 tsp ground cinnamon


  1. Preheat oven to 40c
  2. Line a deep baking /roasting dish with glad bake
  3. Place milk, honey, vanilla bean paste and chai in a saucepan and bring to simmer. Remove from heat let sit for two mins to allow to seep. Strain and wait till it becomes lukewarm. Measure 400 ml and reserve remaining for glaze


  1. Place all ingredients including milk mix except chocolate in a bowl of an electric mixer fitted with a dough hook. Mix for 10 mins till mixture forms a smooth ball. Cover with glad bake and place in the oven to prove at 40 c till doubled in size. 
  2. Turn out onto a lightly floured surface and knead in the chocolate. Divide dough into 12 equal portions and shape into balls. Place in the prepared baking tray. Cover with glad bake and prove at 40 c for 40 mins
  3. Remove from oven and increase oven temp to 190c
  4. For paste mix flour and milk to form piping consistency. Pipe crosses on buns
  5. Bake at 190c for 22 mins


  1. Combine reserved milk mix sugar and cinnamon in a small saucepan and bring to simmer
  2. Brush buns with glaze
  3. Enjoy with a cup of #OnlyTheGoodStuff
